Vietnamese summer rolls

Healthy, fresh and delicious, Vietnamese summer rolls are easy to make with all sorts of colorful veggies to taste. Serve these rice paper wraps with a creamy peanut sauce as a dip for a delicious and light appetizer or side dish for lunch or dinner! The perfect finger food to make yourself!

Peanut Sauce

65 g creamy peanut butter
2 tbsp soy sauce
2 tbsp maple syrup
1-2 tbsp rice vinegar to taste
1 tbsp sesame oil
1 large clove garlic pressed
1 tsp grated fresh ginger
1 red chilli or 2 teaspoons Sriracha or Sambal Oelek to taste
Juice of 1 lime about 1-2 tbsp or to taste

instructions
Simply place all the ingredients for the peanut sauce in a blender (or in a glass or bowl) and then
blend in a blender or with an immersion blender until creamy (or shake or blend with the lid on)
until you have a smooth sauce. If necessary, add a little water or coconut milk until the desired
consistency is reached. (Use a little water or coconut milk if you’re serving the peanut sauce as a dip,
or more if you’re serving it as a salad dressing).

alternatively hoisin sauce can also be used
fish sauce 3 tbsp
dark soy sauce 2 tbsp
Garlic 1 piece
Red chilli 1 piece
Lime 0.5 pieces
brown sugar 2 tbsp
Peanut butter 2-3 tbsp

Squeeze half of the lime, chop the garlic and chilli finely, add the remaining ingredients and stir until smooth; place in serving bowls

Summer rolls
Rice paper 1 packet
Shrimp 150g
cooked chicken breast, cut into thin strips 250 g
Carrots 2 pieces
Cucumber 0.5 pieces
Lettuce leaves 4 pieces
Coriander 1 bunch
Mint 1 bunch

Preparation

Cut the carrots into thin strips, finely dice the cucumber, chop the coriander and mint, divide the shrimp if necessary depending on their size; Mix all ingredients (except rice paper & lettuce leaves) well in a bowl.
Soften the rice paper individually in warm water, place the lettuce leaf on the lower edge, add the remaining ingredients, roll 1 turn, fold in from the sides and finish rolling. With a little practice, they become beautiful too. Repeat until all ingredients are used up.
Dip the rolls while eating and enjoy your meal.
