Salsa Verde

The green sauce is called Salsa Verde in Italy and is prepared with Mediterranean herbs.
It goes perfectly with raw (and cooked) meat and on bread.

Ingredients:
2 tbsp anchovy fillets
2 tbsp capers
2 cloves of garlic,
1 1/2 tablespoons Dijon mustard
1 1/2 tbsp vinegar (any kind)
1 1/2 tablespoons extra virgin olive oil
half a bunch of parsley (leaves only)
half a bunch of mint (leaves only)
pepper

Add the anchovies, 1.5 tbsp capers, 2 cloves of garlic, a pinch of salt and half a bunch of mint
and parsley in a mortar and pound with a pestle until a paste has formed.

Mix 1.5 tbsp mustard and 1.5 tbsp red wine vinegar. Loosen up with a little oil, then the remaining herbs
stir in Mix everything to a creamy consistency. Taste and season as needed.
