Axel Schmitt is a bread sommelier and was just able to win 2022 the renowned title of World Baker
thanks to his ingenious bread skills. But baking bread does not always have to be complicated –
this is shown by his recipe for what is probably the simplest bread in the world.

INGREDIENTS

spelled flour 600 g (630)
water 450 g
yeast 10 g
Salt 15g
Sugar 10g
Custom Unit
some vinegar

Step 1: Place the ingredients in a bowl and mix with a wooden spoon.
The nice thing about the dough is that it only needs to be stirred and not kneaded.

Step 2: Then put it in the fridge for at least 10 hours and let it rest.

Step 3: Sieve the dough with flour and turn out onto baking paper.
Fold the parchment paper twice on top of each other and place the parchment paper and bread in a 250 °C hot clay pot.

Step 4: Bake for 30 minutes at 230 degrees and finally
Take the bread out of the tin and bake for 15 minutes at 200 degrees until crispy.
