Olives are great, but olives in a delicious marinade are even better!!
Ingredients
14 oz / 400 g olives (see notes)
1/3 cup / 80 ml high-quality extra virgin olive oil
1/4 cup / 20 g very finely diced fresh parsley
4 thick garlic cloves, peeled and thinly sliced
1 small orange, peeled into strips with a vegetable peeler
1 tbsp red wine vinega
1 tsp dried oregano
1 tsp dried chili flakes
Salt (season to taste at the end)
Block of feta and toasted ciabatta slices for serving (optional)
Instructions
In a large shallow bowl, whisk together extra virgin olive oil, red wine vinegar, parsley, oregano. Sauté chili flakes, orange zest, and garlic in a small skillet. Fold in olives.
Cover and marinate at room temperature for at least an hour, turning occasionally if possible. If marinating for more than an hour, marinate in the refrigerator. Bring to room temperature before serving to release the oil.
